Vineyard location: on terraces, at 350-400 meters’ of elevation, with permanent grassing
Grapes: more than 90% of Malvasia Bianca Lunga. The remaining percentage comes from old native white grape vines.
The harvest takes place in early morning in order to avoid the overheating of the grapes. The grapes are then brought to the cellar into small boxes, paying great attention not to break or squash them. The off-the-skins vinification takes place with no added yeast and after a light cold maceration of the skins. The fermentation occurs into not-toasted acacia barrels, where it remains for six months, undergoing frequent batonnage. Afterwards, it is transferred into stainless steel vats, allowing the wine to settle.
Bottling takes place in August.
The production in its whole is organic and there is no use at all of products of animal origin. The vineyard fertilization, when needed, is a green manure of legumes and pruining residuals.
Bottling occurs under vacuum, with high quality corks.
Since the wine is unfiltered, it is likely to see light natural sediment. It is advised to taste the wine at 12°C and to open the bottle a few minutes before, leaving it to briefly aerate in the glass.
